Corte os talos e reserve. Descasque as batatas e corte em pedaços pequenos. Numa panela, cozinhe as batatas e os talos da couve-flor no caldo de frango até ficarem macios. Bata no liquidificador e reserve. Pique o presunto em cubinhos. Refogue-o na manteiga em fogo baixo até começar a pegar uma corzinha. Junte a cebola e o alho e mexa até ficar transparente. Acrescente os buquês de couve-flor e refogue por 1 minuto. Tempere com sal e pimenta. Regue com o vinho, tampe a panela e deixe abafar em fogo baixo. À parte(numa bacia) misture o molho de tomate,o leite de coco e o caldo de peixe,joga por cima de tudo sem mexer. Tampe a panela  e leve ao fogo. Em outra vasilha bata o suco de limão, o iogurte e o restante do adoçante. Junte as duas misturas até obter uma massa homogênea e consistente.Coloque bo congelador por 1 hora.Retire e volte à batedeira.Repita o procedimento após 1 hora. Em uma forma refratária retangular coloque um pouco do molho de tomate, disponha as fatias de peito de peru e, sobre elas, uma camada de ricota temperada. Repita a operação até completar a forma. Termine com molho de tomate e polvilhe o queijo ralado. Cubra com papel alumínio e leve ao forno médio pré-aquecido por 30 minutos. Retire o papel e deixe gratinar por mais 5 minutos no forno.
